Cookhatter will be back at Juicebar on Nov 19th.(See last post)
Juicebar is a gastown cafe Birds and beets's after hours natural wine bar, it is running by Sion Iorwarth.
Since before I (cookhatter) work with them, I have been a fan of their style.
When I go there, I don’t need to be fancy.
The ambience is still cool and one of a kind, good music, cool selection of natural wines. Existential eating (Heather Dosman)& her showcasing of chef’s charming snacks.
They always bright up my end of day & beginning / end of night.
I feel lucky to be a part of her showcasing chefs.
My snacks are Shojin inspired foods(the food photos below are from the last time).
Western or Asian food meets Japanese simplicity.

Just finished my event last Monday.
It was 3rd edition, my event called "Far East" (#fareastyvr) and the theme was " Roots and culture", I used lots of roots vegetables and culturing(fermented) methods for the menu.
This event's base theme is Japanese Monk food - They forage, farm, culture food. Respect to the season, appreciate the nature. Inspired by those monk food method and theory.
The largest part of collecting ingredients and getting menu ideas are foraging. Forest inspires me a lot.
What is interesting about foraging(wild crafting) is "discovery".
Forest isn't like wholefoods , you CAN'T find whatever you want. Because some of plants are very seasonal and only short time, as well as we never can expect they will be the same spot every year. However instead of what you couldn't find exact ingredients, you can discover new ingredients and ideas.
I always ask Museum eats( Camille Flanjak, the lady on the photo) when I had questions for the wild ingredients. This time is second time to get foraging together with her for Far East. I constantly join her workshops personally. Good things about foraging besides picking plants are being in nature, feel, think about ecology, remember childhood memories.
She teaches guests not only what kind of plants are edible, also telling us story of lands, ecology, science of plants, and more.
Over all. The event was successful. Thank you for everyone helped at this event, of course my guests, and special thank you for Tempea foods. Thank you for providing tasty tempeh.

It will be secret dinner style, the number of seats are very limited. April 23 (Mon), at 7pm.
As the title is "Roots and culture"..we won't serve Jamaican food... We will serve roots vegetables and cultured ingredients themed food.

As I wrote about it the last post, vegan contemporary dinner pop up "Far East" is back again.
The last one was at Cacao Vancouver, with identically wonderful tea from Tsuen tea - 27th generation of the tea company explained about their tea and the history, unique ideas of using tea.
This time is pretty casual, secret dinner, it will be outside. The location is near Canada line City hall broadway station. Enjoy nice vegan food and natural wines with summer evening air. This event is reservation only. More details and tickets are here.
The food theme is "minimal" more than the last one.Focussing on the layers of the taste and bring up the flavor of each ingredients.
My menu ideas are from Shojin (Japanese monk food ), but it's not too traditional, in modern western way.
The drink menu is aperitif and two kinds of wines, of course there are cool flavoured beverages for sober folks as well.
The natural wines are consulted by Sean from "Juice bar" Wednesday nights at the Birds and the beets in Gastown Vancouver.
